Pumpkin Squares
- 1 Cup flour
- ½ Cup quick oats
- ½ Cup brown sugar
- ½ Cup butter
- Filling:
- 2 cups pumpkin
- 1 can evaporated milk
- 2 eggs
- ¾ Cups sugar
- 1 tsp cinnamon
- ½ tsp ginger
- ½ tsp cloves
- ½ tsp salt
- Topping:
- ½ Cup pecan
- 2 T butter
- ½ Cup brown sugar
Combine flour, oats, brown sugar and butter until crumbly. Press into a greased 9x13 pan. Bake at 350 for 20 minutes. In a mixing bowl, beat ingredients for filling. Pour onto crust and bake at 350 for 20 minutes.
Topping: Combine nuts, butter and brown sugar. Sprinkle over pumpkin filling. Return to oven and bake 15-20 minutes until filling is set. Cool and cut into squares.
